The harvested potatoes are first graded by size and washed to remove any soil. Then they are briefly steamed and brushed to remove the skin then sent off to the various processing lines where they are sliced into one of a number of different cuts, or mashed and made into croquettes or gnocchi.
After blanching in boiling water, French fries are cooked in high-quality oil which enhances their aroma and flavour. Lastly they are packaged and deep-frozen to -18°C, ready to be sent to stores.
