Potato, Cherry Tomato & Mozzarella Bake

300 g Potato, Cherry Tomato & Mozzarella Bake
300 g cherry tomatoes
salt
basil, large bunch
extra-virgin olive oil
cherry tomatoes to decorate

Method

Wash and cut the tomatoes in two, remove the seeds. Tear the basil leaves into pieces, add them to the tomatoes and leave to rest for 5 minutes. 2) Slice the mozzarella and place in a colander to lose excess moisture. 3) Sauté the cherry tomatoes in 2 tbsp oil for 3-4 minutes then season with salt. 4) Oil a baking tin and arrange a layer of slightly-overlapping potato rounds on the bottom. 5) Cover with half the tomatoes, then arrange the mozzarella slice on top. 6) Cover the mozzarella with the rest of the tomatoes and finish with a layer of potato rounds. 7) Complete by decorating with a few tomato halves. Bake in the oven at 200°C for 20-22 minutes. Remove from the oven, garnish with a few basil leaves and serve immediately.
