Patatas Bravas with Novelle Iodì, paprika and tomato sauce

1 kg Novelle Iodì
100 g of tomato puree
1 small bowl of sweet paprika
2 tablespoons of red wine vinegar
parsley
extra virgin olive oil, fine salt, pepper
Preparation
Peel the potatoes and cut them to get some chunks. In a separate bowl, pour the tomato puree with the red wine vinegar and mix. Put some oil in the bottom of a pan to proceed with cooking the potatoes. First salt and pepper them. Sauté the potatoes for about 5 minutes. Lower the heat and cover with a lid to cook another 20 minutes. Add the paprika to the potatoes, raise the heat and sauté for about another 5 minutes. Finally, add the tomato puree (mixed with the vinegar) and cook for another 3 minutes until the sauce has dried. Add parsley to taste and serve in a bowl with sticks.
