Sweet Potato Bake with Raisins, Pine Nuts, and Chilli Pepper

INGREDIENTS. Serves 4.

800g sweet potatoes
1 clove garlic
1 tbsp raisins
extra virgin olive oil
salt
pepper

Preparation
Peel the sweet potatoes, cut into reasonably sized wedges, and wash.

Place on a greased baking tray and season with salt, pepper, rosemary, the crushed garlic, finely chopped chilli peppers, and a generous drizzle of olive oil. Bake at 190°C for approximately 15 minutes.

Meanwhile, soak the raisins in warm water. Take the sweet potatoes out of the oven, turn them over, and add the drained raisins and the pine nuts.

Bake for another 10 minutes.
