Vegetable Salad with Fries

INGREDIENTS. Serves 4.

750g Patatine Patasnella
1 aubergine
1 yellow pepper
1/2 red pepper
4 courgettes
2 spring onions
5/6 cherry tomatoes
1 bouquet garni (thyme, marjoram, sage)
1 garlic clove
extra virgin olive oil
salt

Preparation
Wash and trim the peppers and cut them into fairly large squares.

Dice the aubergine, cut the courgettes into thick slices, and cut the spring onions into wedges.

Chop the herbs and garlic. Add the mixture to the vegetables, mix, and season with salt and a little oil.

Pour the vegetables onto a large parchment-lined baking tray, then bake at 200°C for 25 minutes.

Remove the tray from the oven and gather the vegetables on one side of it.

Arrange the fries on the other side of the tray. Put it back in the oven and bake for another 13 to 15 minutes at 220°C.

Mix the fries with the vegetables and serve.
