Ricotta and courgettes burger with Patasnella Casalinghe fries

Ingredients for 6 burgers
250g ricotta 300g courgettes 50g breadcrumbs 50g grated Parmesan 1 egg salt and pepper 600g Patasnella Casalinghe

Preparation
Grate the courgettes, squeeze them and transfer them into a bowl with ricotta, grated Parmesan, egg, breadcrumbs, salt and pepper. Mix everything, stirring with a fork, take a handful of it at a time, make some lightly flattened balls and pass them in the breadcrumbs. In a large pan, heat a round of extra virgin olive oil and cook the burgers for about 3 minutes on both sides. Preheat the 220°C oven with the static mode: place the Patasnella Casalinghe fries in a tray and bake them for about 10-12 minutes or until golden brown. Take the fries out of the oven and serve them with the burgers. You can accompany this delicious recipe with a mixed salad, or sauces of your choice such as ketchup, mayonnaise or barbecue sauce.
